These super-easy fresh-tasting refrigerator pickles don't even need boiling. Just place sliced cucumbers into jars, cover with sweet and sour pickling mixture, and refrigerate for a week.
Ingredients:
1 onion, sliced
4 cups sliced cucumbers
2 1-quart jars with lids
1 1/2 cups white sugar
1 1/2 cups vinegar
1/2 teaspoon mustard seeds
1/2 teaspoon celery seeds
1/2 teaspoon ground turmeric
1 tablespoon salt
Directions:
Divide onion slices and cucumbers into jars.
Stir sugar, vinegar, mustard seeds, celery seeds, turmeric, and salt in a bowl until sugar and salt have dissolved; pour the pickling syrup over the onion and cucumber slices. Cover jars with lids and refrigerate for 1 week before opening.
