Three years ago, I decided to give a shot at replicating a store bought mango pickle from Pakistan, infusing it with the flavors and spices that I so missed from when I was there. Every summer, when the lovely deep green mangoes begin to appear at the local market, it’s time for me to bottle them up, enough to last for the year.
