Every summer, Grandma Thelma would make a batch of refrigerator pickles out of whatever she was growing that was in season: cucumbers, okra, carrots, radishes. Instead of needing a lot of canning equipment and water baths or pressure cookers, she just had a small bucket that she put in the bottom of her fridge, mixed a brining solution, added pickling spices and then tossed in whatever veggies she had and weighed them down in the brine with a salad plate.
Every Sunday after church, I'd sneak a few pickles from the fridge before going out to help weed the garden while Grandma Thelma whipped up fried chicken, fried catfish or something else equally delicious to enjoy with those pickles.
